Vegan Miso Avocado Toast Recipe

This vegan miso avocado toast was a tasty twist at breakfast!

I’m about four months into this vegan way of eating. And while I love it, I’m still really struggling with breakfast. I don’t know why it’s such a mental block for me, but maybe my brain just isn’t ready to work that hard before coffee.

So as I’ve mentioned in previous posts, I’ve been focusing on breakfast ideas so that I can provide myself with an array of choices that I don’t have to think about first thing in the morning. Easy breakfast ideas don’t have too many ingredients.

A slice of toasted, whole grain bread lays on a cutting board topped with a light layer of Miso paste, sliced avocado a single slice of tomato and a few pumpkin seeds in this recipe for Vegan Miso Avocado Toast.

I’ve also developed a new love of miso paste. The white miso paste, in particular. It adds such wonderful umami flavor to whatever you add it to. So I thought I’d try adding it to my morning toast.

This was a wonderful start to the morning! The flavor is just different enough to let your brain know you’re trying something new and different, but the recipe is simple and quick enough that your pre-coffee brain won’t have to struggle. That’s my favorite kind of breakfast!

I actually have another variation of this that I’m going to try soon. If it works out, I’ll post it here as well. But for now, this is a wonderful way to enjoy avocado toast while still mixing things up and bit. After all, nobody wants a boring breakfast routine. Me included!

An easy, don't-have-to-think-about-it breakfast!

Ingredients
  • 1 slice vegan, whole grain bread
  • 2 tsp. white miso paste
  • 1/2 medium avocado (sliced)
  • 1 slice fresh tomato
  • 2 tsp. pumpkin seeds
Instructions
  1. Toast your bread as usual.

  2. Using a knife, spread on the miso paste like you would spread butter. Keep the layer thin, because you don't want to overdo the strong flavor or sodium.

  3. Layer on your avocado slices, top with a tomato slice and finally sprinkle on some pumpkin seeds. Enjoy!
