This vegan breakfast pizza recipe is a delicious, quick and easy breakfast that will get you out the door fast first thing in the morning!
I’ve been doing a lot of breakfast recipes lately, but for good reason. Breakfast, for me, has been the hardest meal of the day for me since going vegan. It’s just so hard to wrap my brain around what breakfast should look like as a vegan. I blame it on years and years of having eggs for breakfast.
I found these whole grain pita breads at Trader Joe’s, but any pita bread will do. And now that I mention it, any nut butter or fruit will do here too! Basically, whatever you have handy will work here. It’s pretty darn versatile! Plus, it gets you out the door quick in the morning. Can’t argue with that!

This quick and easy breakfast is delicious and actually filling!
- 1 medium whole grain pita
- 2 tbsp. peanut butter
- 1/4 cup strawberries
- 1/4 cup chopped, fresh mango
- 2 tsp. dried coconut (unsweetened)
- 1 sprinkle ground cinnamon
Spread the peanut butter over the pita evenly.
Layer on the fruit and then sprinkle the coconut and cinnamon over the top.
