I’ve been sharing a lot of easy vegan breakfast recipes lately, but for good reason.

Since converting to a vegan diet plan, breakfast has been the biggest challenge of the day for me. It’s just so hard to wrap my brain around what breakfast should look like as a vegan. I blame it on years and years of having eggs for breakfast.

Coming up with tasty ideas for a vegan breakfast really isn’t very difficult. I think it can just be extra challenging when you are used to eating meat and dairy products.

Fortunately, breakfast pizza is something that everyone can enjoy!


To make this an easy vegan breakfast, the breakfast pizza won’t have to cook in the oven. Although hot pizza IS delicious, one great benefit of this particular breakfast pizza recipe is, you won’t have to worry about reheating it!

There are plenty of ways to top a quick, no-bake breakfast pizza, though!

For the base of this breakfast pizza recipe, I use whole grain pita breads from Trader Joe’s, but any pita bread will do. To that, I add:

  • peanut butter
  • sliced fresh strawberries
  • diced mango
  • unsweetened coconut flakes
  • sprinkling of cinnamon

If you have a peanut allergy or simply don’t care for it, any nut butter will do. The same goes for the fruit. Basically, whatever you have handy works for this breakfast pizza recipe; it’s pretty darn versatile! Plus, it gets you out the door quickly in the morning. Can’t argue with that!

  • 1 medium whole grain pita
  • 2 tbsp. peanut butter
  • 1/4 cup strawberries
  • 1/4 cup fresh mango, diced
  • 2 tsp. unsweetened coconut
  • 1 sprinkle ground cinnamon
  1. Spread the peanut butter over the pita evenly.

  2. Layer on the fruit and then sprinkle the coconut and cinnamon over the top.
